- 2 zucchinis
- 1/2 cup marinara sauce
- 2 cups ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- Salt and pepper, to taste
- Preheat oven to 350°F and spray a 9×13 inch baking dish with non-stick cooking spray.
- Wash the zucchinis and cut off the ends, then use a spiralizer or a julienne peeler to create zucchini noodles.
- In a medium-sized bowl, mix together the ricotta cheese, mozzarella cheese, parmesan cheese, garlic powder, Italian seasoning, and a pinch of salt and pepper.
- Spread half of marinara sauce evenly on the bottom of the prepared baking dish, then layer half of the zucchini noodles over the sauce.
- Spread half of the cheese mixture over the zucchini noodles, then layer with the remaining zucchini noodles.
- Top with remaining marinara sauce and cheese mixture, spreading evenly to the edges of the dish.
- Cover the lasagna with foil and bake for 30 minutes.
- Remove foil and bake for an additional 10 minutes until the cheese is bubbly and lightly golden brown.
- Allow to cool slightly before serving.
