Ingredients

  • 2 zucchinis
  • 1/2 cup marinara sauce
  • 2 cups ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350°F and spray a 9×13 inch baking dish with non-stick cooking spray.
  2. Wash the zucchinis and cut off the ends, then use a spiralizer or a julienne peeler to create zucchini noodles.
  3. In a medium-sized bowl, mix together the ricotta cheese, mozzarella cheese, parmesan cheese, garlic powder, Italian seasoning, and a pinch of salt and pepper.
  4. Spread half of marinara sauce evenly on the bottom of the prepared baking dish, then layer half of the zucchini noodles over the sauce.
  5. Spread half of the cheese mixture over the zucchini noodles, then layer with the remaining zucchini noodles.
  6. Top with remaining marinara sauce and cheese mixture, spreading evenly to the edges of the dish.
  7. Cover the lasagna with foil and bake for 30 minutes.
  8. Remove foil and bake for an additional 10 minutes until the cheese is bubbly and lightly golden brown.
  9. Allow to cool slightly before serving.
