Crispy Baked Parmesan Zucchini Fries – A Healthy Keto-Friendly Recipe
- 3 whole zucchinis
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons almond flour
- 2 eggs beaten
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat the oven to 400°F.
- Cut the zucchinis into fry-shaped sticks (1/4-inch thick).
- In a shallow bowl, combine the Parmesan, almond flour, garlic powder, onion powder, paprika, salt, and pepper.
- Place the beaten eggs in another shallow bowl.
- Dip the zucchini sticks into the eggs, then into the Parmesan mixture, coating each side.
- Place the zucchini sticks on a baking sheet. Bake for 25-30 minutes, flipping the fries halfway through cooking.
