Keto Crunchwrap

Meal prepTo save time, make up your keto tostada shells ahead of time. You can stop at the tortilla stage and refrigerate them for up to a week or freeze them for 1-2 months. Just keep the low carb tortillas sandwiched between the parchment paper and store flat in a freezer safe bag.
You can store fried tostada shells at room temperature for up to 3 days.
Refrigerator storage
The assembled low carb crunch wrap can be stored in the refrigerator for up to 5 days. To reheat, bake in the air fryer at 375 degrees for 3-4 minutes or the oven for 5-8 minutes.
Freezing the crunch wraps is not recommended; however, you can freeze the tortillas as mentioned above.

Parmesan Crusted Chicken

This crusted chicken recipe is easy to change to make it exactly as you’d like. Here are a few ideas for you to make variations.Juicy: Add mayo to the egg wash for a slightly tangy flavor and to make this chicken juicier.
Italian: Add Italian seasonings to the parmesan cheese.
Marinara sauce: Top the cooked chicken with marinara for a tangy and delicious sauce.
Super Cheesy: Lay slices of mozzarella cheese or provolone and broil until melted for an extra cheesy layer.
Bake: If you’d rather bake the chicken instead of pan-frying it, heat the oven to 350 degrees and cook for 30-40 minutes until the chicken is 165 degrees. Allow the chicken to sit for five minutes before cutting to allow the juices to recirculate.
Air fry: The air fryer is another great way to cook this chicken. Preheat it to 400 degrees and let the chicken cook for 10-12 minutes.
Fry: Go all out and fry the chicken in a pot of oil for the crispiest results. This may not be as healthy as another method, but it sure is delicious!

Chicken Caprese Kebabs

Don’t miss these spicy turmeric chicken kebabs, bacon-wrapped brussel sprout kebabs, or bacon-wrapped asparagus kebabs.
Chicken Caprese skewers are lighter and easier to eat at backyard barbecues or pot luck dinners with your friends and family, and they’re great for kids with bite-sized chicken pieces.

You can easily remove the pieces from the skewers and serve them on a big platter drizzled with olive oil and balsamic vinegar or pass the individual skewers around.
Serve them with a dark green salad, coleslaw, bread, or roasted vegetables. Pair them with a cold summer drink like lemonade, ice tea or your favorite cocktail.

Poke Bowl

Traditional poke bowls typically use ahi tuna, short grain white rice and sweetened marinades. If you’ve want the flavors of your favorite sushi or sashimi but don’t want to mess with seaweed or sushi rice, just make this poke bowl recipe instead!

This poke bowl works for a healthy lifestyle by swapping short grain rice for cauliflower rice and avoiding sugars in the marinade. But don’t worry, even without added sugar, this marinade adds unbelievable freshness and flavor to the salmon. Plus, it’s allergy-friendly: no eggs, nuts, or dairy! Top the cauliflower rice and salmon with avocado and a drizzle of siracha for a filling and healthy meal. Serve this with a side of cucumber salad.
