  10. 2-4 ounces of your favorite protein (i.e. chicken, shrimp, tofu, etc.)
  11. Salt and pepper to taste
  12. Fresh cilantro and sliced jalapeno for garnish (optional)

Instructions

  1. Heat the coconut oil in a large skillet over medium heat.
  2. Add the garlic, ginger, and green curry paste to the skillet and stir until evenly distributed and fragrant, about 1-2 minutes.
  3. Stir in the fish sauce, coconut cream, and cauliflower rice until combined. Cook for 2-3 minutes.
  4. Add the vegetable broth and stir to combine. Cook for 1-2 minutes.
  5. Stir in the vegetables and cook until tender, about 7-8 minutes.
  6. Stir in the protein and adjust seasoning with salt and pepper to taste. Cook until the protein is cooked through, about 5-7 minutes.
  7. Serve warm with additional fresh cilantro and jalapeno, if desired.
