Ingredients
  

  • 2 zucchinis spiralized
  • 2 tablespoons olive oil
  • 2 boneless skinless chicken breasts
  • 2 cloves garlic minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 1/4 cup chicken broth
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions
 

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the chicken breasts and cook until browned, about 5 minutes per side. Remove from the skillet and set aside.
  • In the same skillet, add the garlic and cook until fragrant, about 1 minute.
  • Add the Parmesan cheese, heavy cream, and chicken broth to the skillet. Stir until the cheese is melted and the sauce is smooth.
  • Add the zucchini noodles to the skillet and toss to coat in the sauce. Cook for 2-3 minutes, until the noodles are tender.
  • Thinly slice the chicken and add it back to the skillet. Toss to combine.
  • Season with salt and pepper to taste.
