Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 boneless skinless chicken breast, cut into thin strips
  • 2 cups chicken broth
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese

Instructions
 

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish with cooking spray.
  • In a large skillet, heat olive oil over medium-high heat. Add the onion and garlic and cook until softened, about 3 minutes.
  • Add the chicken strips and cook until lightly browned, about 5 minutes. Stir in the chicken broth, Italian seasoning, and salt and bring to a boil. Reduce heat to low and simmer until the chicken is cooked through, about 10 minutes.
  • Add the spinach and cook until wilted, about 2 minutes. Add the cream and ¾ cup of the cheese and stir until combined.
  • Pour the chicken mixture into the prepared baking dish. Sprinkle the top with the remaining cheese.
  • Bake for 15 minutes, until the cheese is melted and bubbly. Allow to cool for 5 minutes before serving.
