Ingredients
  

  • 2 cups grated zucchini
  • 1 cup rolled oats
  • 1/2 cup nutritional yeast
  • 1/4 cup ground flaxseed
  • 1/4 cup ground almonds
  • 1 clove garlic minced
  • 1/2 teaspoon sea salt
  • 1 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil for pan-frying

Instructions
 

  • Grate the zucchini and place in a bowl.
  • Add rolled oats, nutritional yeast, ground flaxseed, ground almonds, garlic, sea salt, oregano, and black pepper.
  • Mix all the ingredients together until fully combined.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Using a tablespoon or a large cookie scoop, form small balls out of the zucchini mixture and place them in the hot oil.
  • Cook for 3-5 minutes or until browned and crisp on the outside and cooked through on the inside. Serve warm.
